Beschrijving: Dat deze cava duidelijk in de greep zit van de 60% xarello druiven, wordt meteen al aan de geur duidelijk. Want na de bleekgele, nog groenglanzende kleur met vinnige autostrades van minibelletjes, volgt een appelfris parfum, geurenkruidig, met verse granny smiths en citronella als dominante factor. Daarna, zeer aangenaam en toegankelijk qua smaak, met groene appel en peer tegen opnieuw een zesty, sprankelende citrus-background en een degelijke, grassige afdronk. Geen cava die ontkurkt wordt voor zijn overweldigende finesse of body, maar wel voor zijn fraîcheur en no nonsens karakter dat hij onder andere verkreeg na zo’n 14 maanden kelderrijping. Schenk deze onbekommerde cava daarom jong en fris, zo liefst rond de 6 à 7 °C, eerder bij hapjes en lichte bereidingen dan bij zwaardere tafelacrobatie.
Gerecht: Aperitief, zalmcarpaccio, geitenkaas, oesters, vis met citroen of mosterdsaus Ideaal aperitief, maar ook lekker bij diverse soorten vis, schaaldieren en vlees. Deze cava is een ideale begeleider voor de hele maaltijd, van aperitief tot dessert.
